Ingredients:
- 1 cup corn
- 1 (15 oz) can black beans, drained & rinsed
- 2 garlic cloves, minced
- ½ cup loosely packed cilantro leaves, minced
- Juice from ½ of a lime
- 1 (14 oz) can diced tomatoes, drained
- ½ cup chopped purple onion
- salt & pepper to taste
Instructions:
- Combine all ingredients in a large bowl. Serve with tortilla chips, on tacos, or just enjoy it by itself!
Notes:
Substitute black eyed peas for the black beans / use fresh tomatoes from the garden / green onion instead of purple/red onion / use what you have!
