Ingredients:

  • 1 cup corn
  • 1 (15 oz) can black beans, drained & rinsed
  • 2 garlic cloves, minced
  • ½ cup loosely packed cilantro leaves, minced
  • Juice from ½ of a lime
  • 1 (14 oz) can diced tomatoes, drained
  • ½ cup chopped purple onion
  • salt & pepper to taste

Instructions:

  1. Combine all ingredients in a large bowl. Serve with tortilla chips, on tacos, or just enjoy it by itself!

Notes:

Substitute black eyed peas for the black beans / use fresh tomatoes from the garden / green onion instead of purple/red onion / use what you have!
