It’s by popular request that I share this cheesy potato recipe. It’s one that my mom makes - and is always a crowd favorite.

Cheesy Potatoes

Ingredients:

  • 2 lbs. frozen hashbrowns
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 16 oz. sour cream
  • 1 cup chopped onion
  • 2 cups shredded cheese
  • salt and pepper to taste
For Topping
  • 1/4 c. butter, melted
  • 1.5 cups crushed cornflakes or potato chips

Instructions:

  1. Preheat oven to 300 degrees.  Mix together all ingredients, except for cornflakes and melted butter.  Spread out in a 9 x 13 pan.  Mix melted butter and cornflakes and sprinkle on top of mixture.  Bake uncovered for 2 hours.
