Recipe: Crispy Beef & Veggies

Let’s think outside of the CUBE - Cubed Steak that is!

We all know cubed steak and country fried steak go hand in hand, but let’s explore a new way to use it in a FAST and EASY Simple Supper.

Simple Ingredients:

Cubed Steak

Corn Starch

Salt and Pepper

Veggies (peppers, onion, mushrooms, zucchini - use what you have!) My favorite combo is zucchini and mushrooms.

Key Tip:

If you substitute the cubed steak for tenderized round steak, make sure you slice against the grain - your eating experience will thank me.

Crispy Beef and Veggies

Ingredients

  • 4 beef cubed steaks (about 1 lb)
  • 1 T. olive oil 
  • 1/4 cup corn starch
  • Salt & Pepper
  • 1-2 peppers, chopped
  • 1 onion, sliced
Sauce
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup honey

Instructions

  1. Place 1/4 cup corn starch in bowl and season with salt and pepper.
  2. Slice cube steaks in to strips.
  3. Coat steak slices in corn starch & let it absorb for a few minutes.
  4. Heat 1 T. oil in non-stick skillet.  Working in batches, brown and crisp up steak slices.
  5. Place cooked steak in a bowl and keep warm.
  6. While the steak is cooking, prep & slice vegetables.
  7. Once steak is all cooked, add another 1 T. oil to skillet and sauce vegetables.
  8. While vegetables are cooking, mix together the sauce ingredients.
  9. Add the sauce to the vegetables & stir.
  10. Add the cooked steak back to the skillet, stir, and let simmer in vegetables & sauce.
  11. Serve immediately with your favorite sides & watch it disappear!

Notes:

1 zucchini and mushrooms work well as vegetables too! If you run low on corn starch use an extra 1/4 cup - its purely a suggestion! The corn starch on the meat helps serve as an easy way to thicken the sauce up in mere minutes!
