Freezer Cucumber Pickles
Abundance of cucumbers - what do you do?!
Your garden is in full swing & cucumbers are producing like crazy, or your neighbor graciously shared their bounty!
& you don’t have the patience to do the ENTIRE canning process [or quite frankly, in intimidates you - MOM, I need your help here!] - then this recipe is for you!
Freezer pickles - the perfect balance of sweet and savory - don’t skip the onion!

Freezer Cucumber Pickles
Ingredients
- 7 cups cucumbers - sliced 1/8" to 1/4" thick
- 3 onions, sliced (~2 cups) separated to rings
- 2 T. salt
- 1 T. celery seed
- 2 cups sugar
- 1 cup white vinegar
Instructions
- Combine first 4 ingredients in a large bowl (cucumbers, salt, onion, celery seed)
- Cook sugar & vinegar in a saucepan over medium heat, stirring until sugar dissolved; pour over cucumbers. Cover & chill ~ 48 hours.
- Spoon mixture into 1/2 or 1 pint jars or plastic freezer containers.
- Freeze up to 6 months.
Notes:
Using leftover plastic pickle containers works perfectly for this. If using glass - please be mindful that glass may shatter in freezer if filled too full, or if you remove frozen and run under running water.
