Author:

Ingredients

  • 7 cups cucumbers - sliced 1/8" to 1/4" thick
  • 3 onions, sliced (~2 cups) separated to rings
  • 2 T. salt
  • 1 T. celery seed
  • 2 cups sugar
  • 1 cup white vinegar

Instructions

  1. Combine first 4 ingredients in a large bowl (cucumbers, salt, onion, celery seed)
  2. Cook sugar & vinegar in a saucepan over medium heat, stirring until sugar dissolved; pour over cucumbers.  Cover & chill ~ 48 hours.
  3. Spoon mixture into 1/2 or 1 pint jars or plastic freezer containers.
  4. Freeze up to 6 months.

Notes:

Using leftover plastic pickle containers works perfectly for this. If using glass - please be mindful that glass may shatter in freezer if filled too full, or if you remove frozen and run under running water.
