Recipe: Energy Bites
Key pantry ingredients: Oatmeal, Peanut Butter, Honey - if you have these, then you’ve got the making of a yummy and filling snack - morning, noon, or night!
Energy Bites
Yield: ~20
Portable, nutrient packed, snack bites - for ALL ages!
Ingredients
- 1/2 cup peanut butter (creamy or crunchy)
- 1/3 cup honey
- 1 cup oats
- 1 teaspoon vanilla extract
- 1/2 cup mini-chocolate chips
- ~ 1 tablespoon chia seeds
Instructions
- Heat peanut butter and honey together. Stir well. Remove from heat & add vanilla. Stir in remaining ingredients. Form dough in to small balls. Refrigerate or freeze!
Notes:
Healthy Hacks: add 1-2 tablespoons of chia for a nutrient BOOST. Kitchen Hacks: use a cookie dough baller to scoop bites evenly Additional option: add the chocolate chips AFTER creating ~10 bites for two flavors in one bowl.
